With Doocot fully fledged into our International Markets, we thought it was time to hold a wee tasting to discuss the differences. Doocot is an evolution of Dream to Dram with a longer maturation in cask, and as such the notes emit the familiar fruit forward nature of Kingsbarns.
Yet, as nuanced whisky often provides, there are distinct differences on the nose, palate and finish. The most prevalent of which is the alluring emergence of sweet, creamy, pastry-like aromas in the Doocot tied elegantly together with the fruity overtones provided by the distinct Kingsbarns spirit.
Given that both of these Single Malts were exposed to the same wood (90% 1st-fill ex-bourbon barrels and 10% STR - shaved, toasted, and re-charred) you can expect the same quality of spirit but, like most elegantly crafted thinks, a difference, nae refinement, in final product.
