Darnley's Gin: The Neuk
Ingredients
50ml Darnley’s Navy Strength Gin
5ml Wemyss Malts Peat Chimney Whisky or similar
5ml Noilly Dry Vermouth
Method
Pour all ingredients into a mixing glass, add ice and stir well until mixing glass is frosted. Double strain into a martini glass.
Darnley's Gin: Spiced Pear
Ingredients
50ml Darnley’s Spiced Gin
25ml Lemon Juice
25ml Pear Syrup
1 Egg White
Method
Put all of the ingredients into a cocktail shaker without ice and shake vigorously. Open the shaker, fill with ice and shake again, then strain into a chilled coupe. Place a star anise on the foam to serve.
Darnley's Gin: Admiral Of The Fleet
Ingredients
50ml Darnley’s Navy Strength Gin
100ml Rooibos Tea 20ml honey simple syrup
1tbsp lemon juice Cinnamon stick
For syrup: 1 part heather honey/1 part water
Method
Brew 100ml of Rooibos tea, store in the fridge. Make a batch of honey simple syrup, bring to a simmer until the honey has dissolved then cool in the fridge. Add all of the above ingredients into a cocktail shaker and ice. Shake and strain into the cocktail glass. Garnish with a cinnamon stick.

10ml Sugar Syrup
Pomegranate juice
Tonic
Basil
Method
Muddle the figs, basil and sugar syrup in the bottom of a tall glass. Fill the glass with ice and then add your measure of Darnley’s Navy Strength Gin. A splash of pomegranate juice and then top with tonic. Garnish with a basil leaf
